Ingredients: 1 lb chicken gizzards, cleaned. 2 tbsp olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 tsp paprika. 1/2 tsp cayenne pepper. 1/2 tsp dried thyme. Salt and pepper to taste. 2 cups chicken broth. 2 tbsp chopped parsley, for garnish.
Instructions: In a skillet, heat olive oil over medium heat. Add chopped onions and garlic, saut until translucent. Add chicken gizzards, paprika, cayenne pepper, thyme, salt, and pepper. Cook until gizzards are browned. Pour in chicken broth, bring to a simmer, cover, and cook for 30 minutes or until gizzards are tender. Once cooked, uncover and let simmer until sauce thickens. Garnish with chopped parsley before serving.
