This Slow Simmered Vietnamese Noodle Soup with Chicken, which is also called Pho Ga, is a tasty and comforting dish that's great for cold days. The soft chicken, fragrant spices, and hearty rice noodles make it a filling meal.
Ingredients: 1 whole chicken, cut into pieces. 8 cups chicken broth. 2 onions, sliced. 4 cloves garlic, minced. 2 inches fresh ginger, sliced. 2 tablespoons fish sauce. 1 tablespoon sugar. 1 cinnamon stick. 4 star anise. 2 teaspoons coriander seeds. 1 teaspoon cloves. Salt and pepper to taste. 8 ounces dried rice noodles. Garnishes: sliced green onions, cilantro leaves, bean sprouts, lime wedges, chili slices.
Instructions: In a large pot, combine chicken broth, onions, garlic, ginger, fish sauce, sugar, cinnamon stick, star anise, coriander seeds, cloves, salt, and pepper. Add chicken pieces to the pot and bring to a boil over medium-high heat. Reduce heat to low and simmer, covered, for 1.5 to 2 hours, or until the chicken is tender and cooked through. Remove chicken from the pot and shred the meat, discarding bones and skin. While chicken is simmering, cook rice noodles according to package instructions. Drain and set aside. Strain the broth through a fine-mesh sieve into another pot. Discard solids. Return the strained broth to the stove and bring to a simmer. To serve, divide cooked rice noodles among serving bowls. Top with shredded chicken and ladle hot broth over the noodles. Garnish with sliced green onions, cilantro leaves, bean sprouts, lime wedges, and chili slices. Serve hot and enjoy!

I am using chicken instead of beef because it is less complicated and quicker. Besides, I am using a pressure cooker to make the broth, which reduces the simmering time to just under half an hour.
