The French dish Chicken Marengo is named after the Battle of Marengo. It's a tasty chicken stew made with white wine, mushrooms, tomatoes, and fresh parsley on top.
Ingredients: 4 chicken breasts. Salt and pepper to taste. 1/4 cup all-purpose flour. 2 tablespoons olive oil. 2 tablespoons butter. 1 onion, chopped. 2 cloves garlic, minced. 1 cup sliced mushrooms. 1/2 cup dry white wine. 1 14.5-ounce can diced tomatoes. 1/2 cup chicken broth. 1 tablespoon tomato paste. 1 teaspoon dried thyme. 1 teaspoon dried oregano. 1/4 cup chopped fresh parsley.
Instructions: Season chicken breasts with salt and pepper, then dredge in flour. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken to skillet and cook until browned on both sides, about 5 minutes per side. Remove chicken from skillet and set aside. In the same skillet, add onion, garlic, and mushrooms. Cook until onions are translucent and mushrooms are tender, about 5 minutes. Deglaze skillet with white wine, scraping up any browned bits from the bottom of the pan. Stir in diced tomatoes, chicken broth, tomato paste, thyme, and oregano. Bring to a simmer. Return chicken to skillet and simmer until chicken is cooked through, about 10 minutes. Sprinkle with chopped parsley before serving.
