Ingredients: 1.5 lbs boneless, skinless chicken breasts, diced. 1 cup orzo pasta. 1 onion, finely chopped. 3 carrots, sliced. 3 celery stalks, chopped. 4 cloves garlic, minced. 6 cups chicken broth. 1 can 14 oz diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 teaspoon dried oregano. Salt and pepper to taste. 2 cups spinach leaves. 1/4 cup fresh parsley, chopped.
Instructions: Place diced chicken, orzo, onion, carrots, celery, and garlic in the slow cooker. Add chicken broth, diced tomatoes, thyme, rosemary, oregano, salt, and pepper. Stir well. Cover and cook on low for 6-8 hours or until chicken is cooked through and vegetables are tender. About 30 minutes before serving, add spinach leaves and fresh parsley. Stir to combine. Adjust seasoning if necessary. Serve hot and enjoy!
