Instructions: In a mixing bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if the batter is slightly lumpy. Let the batter rest for 5-10 minutes to allow the gluten-free flour to hydrate. Heat a lightly oiled skillet or griddle over medium heat. Pour about 1/4 cup of batter onto the skillet for each pancake.
