The wantan skin is thin, the chicken mince well-seasoned as opposed to pork which has a tendency to “sao wei.” Cooked in a rich chicken stock, the soup is finished off with deep-fried shallot & garlic. The wonton goes well with pickled green chilli and a light soy.
