This orange, chickpea, and tahini dressing is high in protein and tastes great with any meal. This dressing is great with salads, grains, or roasted vegetables because it has the creamy texture of chickpeas, the tangy sweetness of orange juice, and the nutty richness of tahini.
Ingredients: 1 can 15 oz chickpeas, drained and rinsed. 1 orange, juiced. 2 tablespoons tahini. 1 tablespoon olive oil. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: In a food processor, combine chickpeas, orange juice, tahini, olive oil, and minced garlic. Blend until smooth and creamy, scraping down the sides as needed. Season with salt and pepper to taste. If the dressing is too thick, you can thin it out with a little water. Serve immediately over salads or roasted vegetables, or store in an airtight container in the refrigerator for up to one week.
