Slow-cooked chipotle pulled pork is a treat that goes well with chilled apple cole slaw. The smoky, spicy, and sweet flavors in these sliders make your mouth water!
Ingredients: 3-4 pounds pork shoulder, trimmed. 1 onion, sliced. 3 cloves garlic, minced. 1 chipotle pepper in adobo sauce, minced. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1 teaspoon smoked paprika. 1/2 teaspoon ground coriander. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup chicken broth. 1/4 cup apple cider vinegar. 1/4 cup brown sugar. For the Apple Cole Slaw:. 2 cups shredded green cabbage. 1 apple, julienned. 1/4 cup mayonnaise. 1 tablespoon apple cider vinegar. 1 teaspoon Dijon mustard. Salt and pepper, to taste. Slider buns, for serving.
Instructions: In the slow cooker's bottom, put the sliced onion. Place the pork shoulder on top. Put cumin, oregano, smoked paprika, coriander, salt, and black pepper in a bowl. Add the garlic and mix it all together. Cover the pork with the spice mix. Cover the pork with chicken broth, apple cider vinegar, and brown sugar. Leave the lid on and set the heat to low. Cook for 7 to 8 hours, or until the pork is soft and shreds easily. Make the Apple Cole Slaw while the pork is cooking. Put apple slices, shredded cabbage, mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper in a bowl. Toss until everything is covered. When the pork is done, use two forks to shred it and mix it with the cooking juices. Put the Apple Cole Slaw on top of the slider buns with the chipotle pulled pork. These sliders are tasty and tangy, and the smoky heat and crisp apple slaw go well together.
