These Chipotle Tofu Tacos with Plantain are a tasty and smoky take on regular tacos. The sweet and caramelized plantains go great with the smoky chipotle tofu, making a unique and satisfying flavor combination. For a tasty taco experience, put fresh vegetables, vegan sour cream, and a squeeze of lime on top of them.
Ingredients: 8 small corn tortillas. 1 block of extra-firm tofu, pressed and cubed. 2 ripe plantains, peeled and sliced into rounds. 2 tablespoons chipotle powder. 2 tablespoons olive oil. 1 red onion, thinly sliced. 1 red bell pepper, thinly sliced. 1 cup shredded lettuce. 1/2 cup chopped fresh cilantro. 1/2 cup vegan sour cream. 1 lime, cut into wedges. Salt and pepper to taste.
Instructions: In a bowl, toss the cubed tofu with chipotle powder, salt, and pepper until well coated. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the tofu and cook until crispy on all sides, about 5-7 minutes. Remove from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced plantains and cook until they are caramelized and golden brown, about 3 minutes per side. Remove from the skillet and set aside. Warm the corn tortillas in a dry skillet or microwave for about 20 seconds. To assemble the tacos, place a few pieces of chipotle tofu on each tortilla, followed by a few slices of caramelized plantain. Top with sliced red onion, red bell pepper, shredded lettuce, and chopped cilantro. Drizzle with vegan sour cream and squeeze fresh lime juice over the top. Serve the Chipotle Tofu Tacos with Plantain immediately, garnished with additional cilantro and lime wedges, if desired.
