Aw man you gotta try parsnip when you can it's my fave.
It has the texture of slightly less-starchy potato, kinda between a potato and a carrot, and if you get good ones when they're in season they're very sweet, and have a flavour kind of reminiscent of sweet almond. (When they're out of season they can be kinda mushy and bland though)
You can roast them in honey and butter, with some herbs like sage, thyme or rosemary, or my family's fav thing to do is boil and mash them like potatoes (with honey and butter 😅)
They make great veggie soup as well, throw in some spices like cumin, garam masala and/or curry powder.
I didn't ignore this, I was waiting until I could try parsnip to answer, but it's been harder than I thought to find it here, at least in my near greengrocers. I won't give up tho. I'll try to go to bigger stores and I'll cook them with your recipes, cause they sound tasty 😋
Fun fact: I had to look out for the name that's used here to try to buy it, cause I didn't even know that, and it was "chirivía"
