The best thing about playing an old game that you used to not be very good at is the fact that you now know how to play it and can beat bosses you used to struggle with very easily.

I've been fighting the Chocobo Eater over and over for an hour now. I can kill him in three hits, but I can't keep him alive long enough to push him over the cliff. I want those key spheres though! Ugh!

Apparent moral of this story: sometimes too much grinding can make boss battles practically impossible. Who knew.
