These fudge truffles are a great way to enjoy the delicious combination of double chocolate and peppermint. These treats are great for the holidays or whenever you want something sweet and minty.
Ingredients: 2 cups semi-sweet chocolate chips. 1 cup white chocolate chips. 1 can 14 ounces sweetened condensed milk. 1/2 teaspoon peppermint extract. 1/2 cup crushed peppermint candy canes. 1/4 cup unsweetened cocoa powder. 1/4 cup powdered sugar. 1/4 teaspoon salt. 1/4 teaspoon vanilla extract. 1/4 cup heavy cream. 1/4 cup unsalted butter. 1/2 cup dark chocolate chips for coating. 1/2 cup white chocolate chips for drizzling. Crushed candy canes for garnish.
Instructions: Put parchment paper around the edges of an 8x8-inch square baking pan, leaving some overhang to make it easy to take off. Put the semi-sweet chocolate chips and half of the sweetened condensed milk in a bowl that can go in the microwave. In 30-second increments, stir the chocolate in the microwave until it is completely melted and smooth. Add the peppermint extract and crushed candy canes to the chocolate that has been melted. Spread the chocolate mixture out evenly in the baking pan that has been prepared. Put in the fridge for at least 30 minutes, or until it gets firm. In a different bowl that can go in the microwave, mix the white chocolate chips with the rest of the sweetened condensed milk. In 30-second increments, stir the white chocolate in the microwave until it melts and is smooth. The powdered sugar, salt, vanilla extract, and unsweetened cocoa powder should all be mixed into the melted white chocolate. Put the unsalted butter and heavy cream in a small saucepan. Heat them over low heat until the butter melts. Take it off the heat and mix it in with the white chocolate until it's well mixed. Put the white chocolate mix on top of the chocolate layer that has been chilled in the baking pan. Put it in the fridge for at least two hours, or until it's completely set. When the fudge is set, use the extra parchment paper to lift it out of the pan. You can use a round cookie cutter to make truffle shapes or cut it into small squares. In 30 second bursts, stir the dark chocolate chips in the microwave until the mixture is smooth. To cover each fudge square or truffle completely, dip it into the melted dark chocolate. Put them on a tray lined with parchment paper to cool. In 30 second bursts, stir the white chocolate chips in the microwave until the mixture is smooth. Pour the white chocolate over the fudge squares or truffles that have been covered in dark chocolate. To make it look nicer, sprinkle crushed candy canes on top of the white chocolate drizzle. Give the truffles time to cool down and set. After they've set, you can eat them or give them as a gift!
