Ingredients: 1 cup unsalted butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup chocolate chips. 1/4 cup cocoa powder. 1/4 cup granulated sugar.
Instructions: In a bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and gradually mix in the flour and salt until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a separate bowl, combine the chocolate chips, cocoa powder, and granulated sugar for the filling. Take small portions of the chilled dough and flatten them into discs. Place a small amount of the chocolate chip filling in the center of half of the discs. Top with the remaining discs and press the edges to seal, forming stuffed cookies. Place the stuffed cookies on the prepared baking sheet. Bake in the preheated oven for about 12-15 minutes, or until the cookies are slightly golden around the edges. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Sprinkle with additional powdered sugar if desired.
