Indulge in the decadent richness of this vegan chocolate cherry mousse. Creamy coconut milk pairs perfectly with luscious dark chocolate and sweet cherries, creating a luxurious dessert that's both vegan and gluten-free.
Ingredients: 1 can 14 oz full-fat coconut milk, chilled. 1 cup vegan dark chocolate chips. 1 cup fresh or frozen cherries, pitted. 2-3 tablespoons maple syrup or agave nectar. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: In a small saucepan, melt the chocolate chips over low heat, stirring constantly until smooth. Remove from heat and let it cool slightly. In a blender or food processor, blend the chilled coconut milk scooping out only the thick cream from the top of the can, melted chocolate, cherries, maple syrup or agave nectar, vanilla extract, and salt until smooth and creamy. Taste and adjust sweetness if needed by adding more maple syrup or agave nectar. Transfer the mixture into serving glasses or bowls. Chill in the refrigerator for at least 2-3 hours, or until set. Before serving, top with additional cherries or shaved chocolate if desired.
