Chocolate Christmas Trees
These healthy Christmas tree cupcakes are great for holiday parties and can be eaten by vegans. They're soft, chocolatey, and decorated to look like Christmas trees.
Ingredients: 1 1/2 cups all-purpose flour. 1 cup coconut sugar. 1/4 cup unsweetened cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup almond milk. 1/3 cup vegetable oil. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. Vegan green food coloring. Vegan frosting of choice. Assorted vegan sprinkles or decorations.
Instructions: Preheat oven to 350F 175C and line a muffin tin with cupcake liners. In a large bowl, whisk together flour, coconut sugar, cocoa powder, baking soda, and salt. Add almond milk, vegetable oil, apple cider vinegar, and vanilla extract to the dry ingredients. Stir until just combined. Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely before decorating. Once cooled, tint the vegan frosting with green food coloring to resemble Christmas tree foliage. Frost the cupcakes with the green frosting, then decorate with assorted vegan sprinkles or decorations to resemble ornaments and lights. Serve and enjoy!
