Ingredients: 1 cup quinoa. 2 cups coconut milk. 1/2 cup shredded coconut. 1/4 cup almond flour. 1/4 cup coconut sugar. 1/4 cup maple syrup. 1/2 tsp vanilla extract. 1/4 tsp salt. 1/4 tsp baking powder. 2 tbsp chocolate chips. 2 tbsp brewed coffee. 2 tbsp cocoa powder. 1 tbsp coconut oil.
Instructions: Rinse the quinoa well, and then follow the directions on the package, but use coconut milk instead of water when cooking it. Put the almond flour, coconut sugar, maple syrup, vanilla extract, salt, and baking powder in a bowl. Add the cooked quinoa and mix them together. It should be easy to make a batter. Warm up your waffle iron and use a little coconut oil to coat it. Put some of the batter on the waffle iron and cook it until it's golden brown and crispy.
