A delicious and wholesome quinoa recipe with a sweet and sticky coconut twist. Perfect for a nourishing breakfast or a satisfying dessert.
Ingredients: 1 cup quinoa. 1 can 13.5 oz coconut milk. 1/4 cup maple syrup. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup shredded coconut toasted. Fresh fruit for topping e.g., berries, banana slices. Chopped nuts for garnish e.g., almonds, cashews.
Instructions: Use cold water to rinse the quinoa. Put the quinoa, coconut milk, maple syrup, vanilla extract, and salt in a saucepan. Boil for a few minutes, then turn down the heat, cover, and let it cook for another 15 to 20 minutes, or until the quinoa is done and the liquid is absorbed. Use a fork to fluff up the quinoa, then cover it and set it aside for 5 minutes. Add shredded toasted coconut and mix well. Place quinoa in bowls and top with fresh fruit. Add chopped nuts on top of the fruit. If you want, drizzle with more maple syrup. Enjoy your Coconut Quinoa that is Sweet and Sticky!

Ingredients: 1 cup quinoa, rinsed. 1 can 14 oz coconut milk. 1 cup water. 1 red bell pepper, diced. 1 carrot, julienned. 1 cup snap peas, chopped. 1 tablespoon red curry paste. 1 tablespoon soy sauce. 1 tablespoon Sriracha sauce. 1 tablespoon lime juice. 2 tablespoons chopped fresh cilantro. Salt and pepper to taste.
Instructions: In a saucepan, combine quinoa, coconut milk, and water. Bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed. In a large skillet, heat oil over medium heat. Add red curry paste and stir for 1 minute. Add bell pepper, carrot, and snap peas. Cook until vegetables are tender-crisp.
