In a separate bowl, mix together the almond milk, vegetable oil, vanilla extract, and apple cider vinegar. Pour the wet ingredients into the dry ingredients and mix until just combined. Spoon the batter into the prepared doughnut pan, filling each cavity about 2/3 full. Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the doughnuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Optional: Melt the dairy-free chocolate chips in a microwave-safe bowl in 30-second intervals until smooth. Drizzle over the cooled doughnuts as a topping. Serve and enjoy!
