These Burmese-style wings are packed with flavor from a zesty marinade featuring lime, fish sauce, and aromatic spices. Served with a refreshing cilantro and shallot salsa, they make for a delicious appetizer or main dish.
Ingredients: 12 chicken wings. 2 limes, juiced. 2 tablespoons fish sauce. 2 tablespoons soy sauce. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon ground turmeric. 1 teaspoon ground coriander. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. 1/4 cup chopped cilantro leaves. 2 shallots, finely chopped. Salt and pepper to taste. Oil for frying.
Instructions: In a bowl, mix lime juice, fish sauce, soy sauce, honey, garlic, turmeric, coriander, cumin, and chili powder to make the marinade. Add chicken wings to the marinade and toss until well coated. Let marinate for at least 30 minutes, or overnight for best results. Heat oil in a deep frying pan or fryer to 375F 190C. Fry the marinated wings in batches until golden brown and cooked through, about 8-10 minutes per batch. Drain on paper towels. In a separate bowl, combine chopped cilantro leaves and shallots. Season with salt and pepper. Serve the fried wings hot with the cilantro-shallot salsa on the side. Enjoy!
