This white chicken chili is creamy and full of flavor. It is made with ingredients that are good for you and is perfect for a cozy meal.
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 small onion, diced. 2 cloves garlic, minced. 2 cups chicken broth. 1 cup heavy cream. 1 can diced green chilies. 1 tsp ground cumin. 1 tsp dried oregano. 1/2 tsp paprika. Salt and pepper to taste. 1 cup shredded Monterey Jack cheese. 1/4 cup chopped fresh cilantro optional.
Instructions: Add chicken broth, heavy cream, diced green chilies, ground cumin, dried oregano, paprika, salt, and pepper to a crockpot. Do not stir the ingredients. Make sure to stir everything together well. It should be on low for 6 to 8 hours or high for 3 to 4 hours, or until the chicken is done and the flavors are well mixed. Add the shredded Monterey Jack cheese about 30 minutes before serving and mix it in well until it melts. If you want, you can serve it hot with chopped fresh cilantro on top.
