Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 cup coconut sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1 tsp cinnamon. 1/4 tsp nutmeg. 3 large eggs. 1/4 cup coconut oil, melted. 1/4 cup almond milk. 2 tsp vanilla extract. 2 medium apples, peeled, cored, and diced. 1/2 cup chopped pecans optional. 1/4 cup honey or maple syrup for drizzling optional.
Instructions: Preheat your oven to 350F 175C. Grease an 8x8 inch 20x20 cm baking pan with coconut oil. In a large mixing bowl, combine the almond flour, coconut flour, coconut sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, whisk the eggs, melted coconut oil, almond milk, and vanilla extract together. Pour the wet ingredients into the dry ingredients and stir until well combined. Gently fold in the diced apples and chopped pecans if using. Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Once the coffee cake is done, remove it from the oven and let it cool for a few minutes.
