Ingredients: 1 cup all-purpose flour. 1/4 cup unsalted butter, softened. 1/4 cup granulated sugar. 1/4 cup brown sugar, packed. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/4 teaspoon vanilla extract. 1 egg yolk. 2 tablespoons milk. 1/4 cup powdered sugar for glaze. 1/4 teaspoon vanilla extract for glaze. 1-2 teaspoons milk for glaze.
Instructions: In a mixing bowl, combine softened butter, granulated sugar, and brown sugar. Mix until creamy and well combined. Add the egg yolk and vanilla extract to the butter-sugar mixture. Mix until smooth. In a separate bowl, whisk together flour, ground cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Chill the dough in the refrigerator for 30 minutes. Preheat your oven to 350F 175C. Line a baking sheet with parchment paper. Roll out the chilled dough on a floured surface into a rectangle, about 1/4 inch thick. Using a knife or pizza cutter, cut the dough into small strips, then roll each strip into a mini cinnamon roll. Place the mini cinnamon rolls on the prepared baking sheet, leaving some space between them. Bake in the preheated oven for 10-12 minutes or until lightly golden brown. While the mini cinnamon rolls are baking, prepare the glaze by mixing powdered sugar, vanilla extract, and enough milk to achieve a drizzling consistency. Once the mini cinnamon rolls are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the glaze over the warm mini cinnamon rolls.
