A delicious take on traditional cinnamon rolls are these Pecan Cinnamon Roll Donuts. They have chopped pecans, brown sugar, and cinnamon inside, and a sweet glaze on top. Ideal as a treat with your morning coffee or for breakfast!
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 packet active dry yeast 2 1/4 tsp. 1/2 cup milk, lukewarm. 1/4 cup unsalted butter, melted. 1/4 tsp salt. 1 large egg. 1/2 cup chopped pecans. 1/4 cup brown sugar. 1 tsp ground cinnamon. 1/4 cup powdered sugar for glaze. 1-2 tbsp milk for glaze. 1/2 tsp vanilla extract for glaze.
Instructions: In a bowl, combine lukewarm milk and granulated sugar. Sprinkle the yeast over the mixture and let it sit for 5-10 minutes until it becomes foamy. In a large mixing bowl, add the melted butter, salt, egg, and the yeast mixture. Stir until well combined. Gradually add the flour and mix until a dough forms. Knead the dough on a floured surface for 5-7 minutes until smooth. Place the dough in a greased bowl, cover it, and let it rise for 1-2 hours, or until it has doubled in size. Roll out the dough on a floured surface into a rectangle. In a small bowl, combine the brown sugar and ground cinnamon. Sprinkle this mixture evenly over the dough. Sprinkle chopped pecans over the sugar-cinnamon mixture. Roll up the dough tightly, starting from the long side, to form a log. Cut the log into 1-inch thick slices to create individual donuts. Place them on a baking sheet lined with parchment paper. Cover the donuts and let them rise for another 30-45 minutes. Preheat your oven to 350F 175C. Bake the donuts for 12-15 minutes or until they turn golden brown. While the donuts are baking, prepare the glaze by mixing powdered sugar, milk, and vanilla extract in a bowl until smooth.
