The poppy seeds add a subtle crunch to these deliciously citrusy Lemon Poppyseed Baked Donuts. These are great as a sweet snack or for breakfast.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 2 tbsp poppy seeds. 1/2 cup buttermilk. 1/4 cup unsalted butter, melted. 1 large egg. Zest of 2 lemons. 2 tbsp fresh lemon juice. 1/2 tsp vanilla extract.
Instructions: Set the oven temperature to 175C 350F. Mix the flour, sugar, baking soda, baking powder, poppy seeds, and salt in a mixing bowl. Put the egg, melted butter, buttermilk, lemon zest, lemon juice, and vanilla extract in a separate bowl. Mixing until just combined, pour the wet ingredients into the dry ingredients. Avoid over-mixing. Grease a donut pan, then pour batter into each cavity, filling it about two thirds full. A toothpick inserted into one donut should come out clean after baking for 12 to 15 minutes in a preheated oven, or until the donuts are lightly golden. After letting the donuts cool in the pan for a few minutes, move them to a wire rack to finish cooling. For added taste, you can optionally prepare a lemon glaze by combining powdered sugar and lemon juice and pouring it over the donuts once they have cooled.
