Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 2 tablespoons pink lemonade concentrate. 2 1/2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. Zest of 1 lemon. A few drops of pink food coloring optional. 1/2 cup powdered sugar, for rolling.
Instructions: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and pink lemonade concentrate until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the lemon zest and pink food coloring, if using. Mix until the dough comes together. Cover the dough with plastic wrap and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll tablespoon-sized portions of dough into balls, then roll them in powdered sugar to coat. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the bottom of a glass or your hand. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
