This chicken tortilla soup is quick, tasty, and has a hint of spice. It is topped with crunchy tortilla strips and fresh cilantro. Just right for a comforting meal!
Ingredients: 1 lb cooked chicken, shredded. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 14.5 oz diced tomatoes. 1 onion, finely chopped. 2 cloves garlic, minced. 1 jalapeo, seeded and diced. 6 cups chicken broth. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 2 tablespoons olive oil. Tortilla strips, for garnish. Fresh cilantro, chopped, for garnish. Lime wedges, for serving.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the minced garlic, chopped onion, and diced jalapeo. Saut until the meat is soft. Chicken shreds, cumin, chili powder, salt, and pepper should all be added now. Do this for two minutes. Mix in the corn, black beans, chicken broth, and tomato dices. Bring to a low boil. Allow the flavors to blend for 20 to 25 minutes. If you need to, change the seasoning. Add tortilla strips, chopped cilantro, and lime wedges on top while the food is still hot.
