Ingredients: 2 slices of whole-grain bread. 1 ripe avocado. 4 strips of bacon. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon red pepper flakes optional. 1 tablespoon olive oil. 1 tablespoon chopped fresh cilantro optional. 1 teaspoon lemon juice.
Instructions: Preheat your oven to 400F 200C. While the oven is heating, cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Add the lemon juice, salt, and black pepper to the bowl with the avocado. Mash and mix the ingredients together until you have a smooth avocado spread. Take the slices of bread and toast them until they are crispy and golden brown. You can use a toaster or place them on a baking sheet and toast in the preheated oven for a few minutes. In a skillet over medium heat, cook the bacon strips until they are crispy, about 4-5 minutes per side. Once cooked, place them on a paper towel to remove excess grease. Spread the mashed avocado mixture evenly onto the toasted bread slices. Wrap each slice of bacon around the avocado-covered toast, securing it with toothpicks if needed. Brush the bacon-wrapped toast with olive oil and sprinkle with red pepper flakes for an extra kick of flavor if desired.
