thank you for the compliment ༼ つ ◕_◕ ༽つ you can check out my tutorial here for how i gif in general. and here is my personal settings for the captions/subtitles i put in my gifs.
usually captioning/subtitling is the last step of my giffing process and my go to font settings is Arial Rounded MT Bold (go install this if you haven't!!!!!), size 15 or 16 or 17 px, depending on the size of my gifs.

I used the right click method when I installed my font but of course there are other ways to do it (and I would do all this font installation before giffing of course).
After I type out the caption I want for my gif, I will ALIGN IT CENTER. To do that, hit Ctrl+A (Set selection). There should be dotted lines moving around your gif.
Make sure that you are choosing your font layer -> Choose Move tool -> Align the caption center and bottom.
After that I would get this.
Which is already pretty okay but I always like my font BOLD so i would right click my font layer -> Duplicate layer -> Okay.
And this is my end result.
As a thank you for sending me this ask, I'm sharing my font layer in this PSD. Usually when I make new gifs, I often just drag my font layer from this psd to my newly made gif (always make sure that your font layer is the top mostest layer above all the coloring layers), edit the text of this font layer, then click 'set sub center' in my action pack -> click triangle button at the bottom that would say 'play selection' if i hover it and let my action do all the steps i just mentioned above.
