Sometimes you just throw things together and it turns out alright. Unfortunately I don't measure much.

Boneless skinless chicken breast

8 Oz cream cheese

1 cup chicken broth

1/3 cup pesto

Salt and pepper to taste

Frozen veggies

Cook up the chicken until the exterior is white and add chicken broth. Continue cooking until broth is warm. Add cream cheese in cubes. It will act as if it doesn't want to incorporate at first. Be patient and don't stress. This will take some time. While this is cooking down, steam the vegetables (I chose peas and broccoli) and cook your pasta. Once the cream cheese is fully incorporated add the pesto and stir in. Your sauce should be thicker at this point, if it is not, cook down a but more. Enjoy hot!

Chicken and vegetable stir-fry tonight! This is what I call a clear out the fridge meal. See what protein we have plus leftover ingredients I can find.
