Cinnamon roll cake - recipe from The Country Cook.
This was another big hit and wonderful for a sweet breakfast treat or an after dinner dessert. Pour on the glaze while the cake is still warm so it soaks in and creates an amazing texture and flavor... especially those corners!
Cake mix cookies. SO simple and SO delicious. Grab your favorite cake mix flavor, add two eggs, 1/2 cup melted butter or oil, any fun mix ins and bake! Seriously, how could I get any easier!?

Well I tried another variant of a whoopie pie and had much more success this time around. These have a graham cracker cookie with a chocolate ganache (well supposedly, mine was more like cement) and a light and fluffy marshmallow cream. I tried to make cake box whoopie pies and I will be honest, the two pictured here....are the only two that survived the massacre. And not in a good way. The cakes were so soft and the filling was so stiff that they just kept ripping and tearing. So I mostly ended up with some strawberry flavored, very cake like, cookies. They were tasty and my guinea pigs didn't mind but I was a bit disappointed. I am looking for a new whoopie pie recipe to try if anyone has one!

I made two different versions of a cookies and cream cookie over the weekend.
The first try was with instant chocolate pudding (because I couldn't find cookies and cream pudding), white and milk chocolate chips and oreo cookies. They weren't bad but I didn't love them.
Second try included cookies and cream chocolate bars and oreo cookies.

Tried my hand at some nontraditional airfryer eggrolls. One is filled with taco goodness (ground turkey, cheese, corn, peppers and onions) as well as a steak one with peppers and onions.
The shell did not get as crispy as if you would fry them in oil but they did conquer a craving.

The beer was expectedly on the bitter side which took away sweetness from the cake though they were moist and light. The frosting...that was just a disaster. I've never made buttercream before and quite frankly, after that, I don't want to try again. It was SO bad. Does anyone have any tips and tricks for a nice buttercream for beginners?
Sometimes you just throw things together and it turns out alright. Unfortunately I don't measure much.
Boneless skinless chicken breast
8 Oz cream cheese
1 cup chicken broth
1/3 cup pesto
Salt and pepper to taste
Frozen veggies
Cook up the chicken until the exterior is white and add chicken broth. Continue cooking until broth is warm. Add cream cheese in cubes. It will act as if it doesn't want to incorporate at first. Be patient and don't stress. This will take some time. While this is cooking down, steam the vegetables (I chose peas and broccoli) and cook your pasta. Once the cream cheese is fully incorporated add the pesto and stir in. Your sauce should be thicker at this point, if it is not, cook down a but more. Enjoy hot!

I know that everyday can't be a gourmet meal. I know that some weeks seem to drag on FOREVER. Don't be discouraged and don't beat yourself. Enjoy yourself some Mac & Cheese with the powdered cheese sauce like you were a kid and relax. You deserve it!
