A Japanese clear onion soup that is light and tasty, with mushrooms, vegetables, and a savory broth. Great for a healthy and comforting meal.
Ingredients: 6 cups clear chicken broth. 1 large onion, thinly sliced. 1 carrot, thinly sliced. 2 celery stalks, thinly sliced. 1 cup shiitake mushrooms, sliced. 1 cup bok choy, chopped. 1/4 cup soy sauce. 1 tablespoon mirin. 1 teaspoon sesame oil. Salt and pepper to taste. Green onions for garnish.
Instructions: In a pot, bring the chicken broth to a simmer over medium heat. Add sliced onions, carrots, and celery to the simmering broth. Cook for 5-7 minutes until vegetables are tender. Stir in shiitake mushrooms, bok choy, soy sauce, mirin, and sesame oil. Season with salt and pepper to taste. Simmer for an additional 5 minutes until all ingredients are well-combined. Remove from heat and let it cool slightly. Serve the soup in bowls, garnished with chopped green onions.
