A filling and healthy red lentil soup enhanced by the deliciousness of kidney beans. This soup is full of flavor and healthy ingredients, making it the ideal choice for a warm and filling supper.
Ingredients: 1 cup red lentils. 1/2 cup diced onion. 1/2 cup chopped carrots. 1/2 cup chopped celery. 2 cloves garlic, minced. 1 can 15 oz diced tomatoes. 4 cups vegetable broth. 1 teaspoon cumin. 1 teaspoon coriander. 1/2 teaspoon turmeric. Salt and pepper to taste. 2 tablespoons olive oil. 1 can 15 oz kidney beans, drained and rinsed.
Instructions: In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Saut until vegetables are tender. Add minced garlic and saut for an additional minute. Rinse red lentils under cold water and add them to the pot. Stir in diced tomatoes, vegetable broth, cumin, coriander, turmeric, salt, and pepper. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are cooked through. Add kidney beans and cook for an additional 5 minutes until beans are heated through. Adjust seasoning to taste. Serve hot and enjoy your delicious Red Lentil Bean Soup!

A Japanese clear onion soup that is light and tasty, with mushrooms, vegetables, and a savory broth. Great for a healthy and comforting meal.
Ingredients: 6 cups clear chicken broth. 1 large onion, thinly sliced. 1 carrot, thinly sliced. 2 celery stalks, thinly sliced. 1 cup shiitake mushrooms, sliced. 1 cup bok choy, chopped. 1/4 cup soy sauce. 1 tablespoon mirin. 1 teaspoon sesame oil. Salt and pepper to taste. Green onions for garnish.
Instructions: In a pot, bring the chicken broth to a simmer over medium heat. Add sliced onions, carrots, and celery to the simmering broth. Cook for 5-7 minutes until vegetables are tender. Stir in shiitake mushrooms, bok choy, soy sauce, mirin, and sesame oil. Season with salt and pepper to taste. Simmer for an additional 5 minutes until all ingredients are well-combined. Remove from heat and let it cool slightly. Serve the soup in bowls, garnished with chopped green onions.
