This Vegan Chorizo Breakfast Strata is a tasty and filling dish that is great for brunch or breakfast parties. It's full of tasty vegan chorizo, vegan cheese, and different kinds of vegetables that have been soaked in a creamy almond milk mixture. This hearty strata is simple to make and can be put together ahead of time, which makes it a good choice for busy mornings.
Ingredients: 1 loaf day-old vegan bread, cubed. 1 cup vegan chorizo, crumbled. 1 cup vegan cheese, shredded. 1 cup cherry tomatoes, halved. 1 cup spinach, chopped. 1 onion, diced. 4 cloves garlic, minced. 2 cups unsweetened almond milk. 1 tablespoon nutritional yeast. 1 tablespoon Dijon mustard. 1 teaspoon turmeric powder. 1/2 teaspoon smoked paprika. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Preheat the oven to 350F 175C. In a skillet, saut the diced onion and minced garlic until softened. Add the vegan chorizo and cook until browned. In a large bowl, combine the cubed bread, sauted onion and chorizo mixture, vegan cheese, cherry tomatoes, and chopped spinach. In another bowl, whisk together the unsweetened almond milk, nutritional yeast, Dijon mustard, turmeric powder, smoked paprika, salt, and pepper. Pour the almond milk mixture over the bread mixture, ensuring everything is well coated. Transfer the mixture to a greased baking dish and press down gently. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the strata is set. Garnish with fresh parsley before serving.
