Slow Cooker Coke Chicken is a tasty dish with a mix of sweet and savory flavors. It is made with tender chicken breasts cooked in a sauce made with Coca-Cola, soy sauce, ketchup, garlic, and ginger. This dish is great for a quick dinner during the week or for having people over.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup Coca-Cola. 1/2 cup soy sauce. 1/4 cup ketchup. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1 tablespoon cornstarch. 2 tablespoons water. Sesame seeds and green onions, for garnish optional.
Instructions: Place chicken breasts in the slow cooker. In a bowl, mix Coca-Cola, soy sauce, ketchup, garlic, and ginger. Pour over chicken. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender. Remove chicken from slow cooker and shred with two forks. In a small bowl, mix cornstarch and water to create a slurry. Stir into the sauce in the slow cooker. Return shredded chicken to the slow cooker and mix with the sauce. Cook for an additional 15-30 minutes on high, until sauce thickens. Serve hot, garnished with sesame seeds and green onions if desired. Enjoy!
