A tasty and healthier take on classic donuts are these paleo coconut flour donuts. They are ideal for a paleo diet because they are sweetened with honey and real fruit.
Ingredients: 1/2 cup coconut flour. 1/4 cup arrowroot powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 4 large eggs. 1/4 cup coconut oil, melted. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract. 1/4 cup unsweetened coconut milk. 1/2 cup diced fresh fruit e.g., berries or peaches.
Instructions: Preheat your oven to 350F 175C and grease a donut pan with coconut oil. In a mixing bowl, whisk together coconut flour, arrowroot powder, baking soda, and salt. In a separate bowl, beat the eggs, and then add in the melted coconut oil, honey or maple syrup, vanilla extract, and coconut milk. Mix well. Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms. Gently fold in the diced fresh fruit into the batter. Spoon the batter into the greased donut pan, filling each cavity about 3/4 full. Bake in the preheated oven for 18-20 minutes or until the donuts are golden brown and a toothpick comes out clean when inserted. Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. Optional: Prepare a glaze by mixing together coconut butter and a touch of honey or maple syrup. Drizzle the glaze over the cooled donuts.
