These chocolate chip cookies are vegan and taste great. They are also better for you than regular cookies. They are great for people who want a treat without feeling bad because they are made with almond flour and coconut oil.
Ingredients: 1 1/2 cups almond flour. 1/4 cup coconut sugar. 1/4 cup maple syrup. 1/4 cup melted coconut oil. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup vegan chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine almond flour, coconut sugar, maple syrup, melted coconut oil, vanilla extract, baking soda, and salt. Mix until well combined. Fold in the vegan chocolate chips until evenly distributed throughout the dough. Scoop dough using a tablespoon and form into balls. Place them onto the prepared baking sheet, leaving space between each cookie. Flatten each cookie slightly with the back of a spoon or your fingers. Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Instead of regular roasted potatoes, try these crispy roasted potatoes with thyme and coconut oil. They taste great and are better for you. The coconut oil gives the dish a light sweetness and richness, and the fresh thyme gives it a fragrant herb taste.
Ingredients: 1.5 lbs potatoes, scrubbed and cut into small cubes. 2 tbsp coconut oil, melted. 1 tbsp fresh thyme leaves. Salt and pepper to taste.
Instructions: Preheat oven to 425F 220C. In a large bowl, toss the potatoes with melted coconut oil, fresh thyme leaves, salt, and pepper until evenly coated. Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until the potatoes are crispy and golden brown. Remove from the oven and serve hot.

Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Mix the rolled oats, baking soda, salt, and whole wheat flour in a bowl with a whisk. Melt the coconut oil and mix it with the brown sugar and granulated sugar in a different large bowl. You need to beat the egg and vanilla extract into the mix until it is smooth. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Add the chocolate chips and coconut shreds and mix them in. Place spoonfuls of dough on the baking sheet that has been prepared, leaving a few inches between each one. Make each cookie a little flatter with the back of a spoon. Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown. Cool the cookies for a few minutes on the baking sheet, then move them to a wire rack to cool all the way down.
