A delicious and healthy sushi recipe filled with fresh vegetables, perfect for a light meal or snack.
Ingredients: 3 cups sushi rice. 3 1/4 cups water. 1/2 cup rice vinegar. 1/4 cup sugar. 1 tablespoon salt. 4 nori seaweed sheets. 1 cucumber, julienned. 1 avocado, sliced. 1 carrot, julienned. Pickled ginger, for serving. Wasabi, for serving. Soy sauce, for serving.
Instructions: Run cold water over the sushi rice until the water is clear. Using a rice cooker, put rice and water in it and follow the directions on the box. Mix the sugar, salt, and rice vinegar in a small saucepan. Warm it over medium-low heat until the sugar and salt are gone. Put the cooked rice in a large bowl, and then add the vinegar mixture and mix it in well. Wait until the rice is cool enough to eat. On a bamboo sushi mat, put a sheet of nori. Leave an inch of space at the top of the nori sheet and spread a thin layer of rice over it. Put strips of avocado, cucumber, and carrot in the middle of the rice. Use the bamboo mat to roll up the sushi tightly, and use a little water to seal the edge. Use a sharp knife to cut the sushi roll into 6 to 8 pieces. Do it again with the rest of the ingredients and nori sheets. Add pickled ginger, wasabi, and soy sauce to the vegetable sushi before you serve it.
