Ingredients: 1 1/2 cups coconut milk. 1/2 cup sugar. 1/4 cup cornstarch. 1 teaspoon vanilla extract. 1/4 teaspoon salt. 1 vegan pie crust. 1/2 cup shredded coconut, toasted.
Instructions: In a saucepan, whisk together coconut milk, sugar, cornstarch, vanilla extract, and salt over medium heat. Continue whisking until the mixture thickens and bubbles. Remove from heat. Pour the coconut custard into the pre-baked vegan pie crust. Chill the tart in the refrigerator for at least 2 hours, or until set. Before serving, top the tart with toasted shredded coconut.
