Ingredients: 1 cup chestnut flour. 1/2 cup almond flour. 1/2 cup cocoa powder. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup butter, softened. 1 cup sugar. 3 eggs. 1/2 cup brewed coffee, cooled. 1/4 cup dark rum. 1 tsp vanilla extract. 1/2 cup chestnut puree. 1/2 cup heavy cream. 8 oz dark chocolate, chopped. 1/4 cup brewed coffee, for ganache. 1/4 cup dark rum, for ganache. 1/4 cup powdered sugar, for ganache. 1/4 cup chestnuts, roasted and chopped for garnish. 1/4 cup cocoa powder for dusting.
Instructions: Preheat your oven to 350F 175C. Grease and line a 9-inch 23 cm round cake pan with parchment paper. In a bowl, combine the chestnut flour, almond flour, cocoa powder, baking powder, baking soda, and salt. Set aside. In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the brewed coffee, dark rum, and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Pour the cake batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. In a saucepan, heat the chestnut puree and heavy cream over medium heat until it comes to a simmer. Remove from heat and stir in the chopped dark chocolate until smooth. Stir in the brewed coffee and dark rum for the ganache. Allow it to cool and thicken slightly. Once the cake is completely cool, spread the chestnut-chocolate ganache over the top of the cake. You can let it drip down the sides for a rustic look. Dust the top of the cake with cocoa powder and garnish with roasted chopped chestnuts. Slice, serve, and enjoy!
