I make our simple syrup with a mix of white and turbinado sugar, which is why it looks so dark. I always use some form of raw sugar in my coffee; anything else tastes too sweet. But for simple syrup I like a mix, because it’s easy to go overboard when adding it in, and straight turbinado can overwhelm the coffee profile.
