Hi everyone! Beni here and welcome back to Let’s Not Starve! We are on the last week of our color theme for this month. This week’s theme is all about creating a bento using all of the colors of the rainbow. Rainbows are so cool! We look forward to it after every rain shower and when we were little, we were told there might a pot of gold at the end of it (haha~). Every way you look, rainbow is associated with joy and magic! What’s not to love??? Plus there is  a whole spectrum of foods that we can play with and Lady A wanted to make a little bit of everything!

COLOR - RAINBOW

For this bento Lady A decided to prepare six dishes to highlight most of the colors of the rainbow (for the sake of composition in the bento box, there is no indigo… sorry!!! We love you!). These dishes are not really intended to eat in the order of the spectrum so lets enjoy it one by one.

RED - Fresh strawberries~ They cute and sweet and juicy and vibrant!

ORANGE - Ketchup eggs with red bell peppers (the color degrades to a deep orange when cooked). If you cook orange bell peppers, they will typically turn a light orange or almost yellow.

YELLOW -  Scalloped yukon gold potatoes in olive oil with parsley, shallots, and lemon zest.

GREEN - Stir-fry green beans with slivered almonds. Very simple seasoning~ just sea salt and garlic!

BLUE - Butter cookies :)

PURPLE/VIOLET - Purple sweet potato hash with bacon and purple onion.

Tomorrow’s lunch is going to be a buffet of different flavors!
