Gourmet Roasted Red Pepper Pizza with Goat Cheese
Delicious beef meatballs simmered in a creamy mushroom sauce, perfect for a comforting dinner.
Ingredients: 500g ground beef. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1 egg. 1/4 cup chopped parsley. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 250g mushrooms, sliced. 1 cup beef broth. 1/2 cup heavy cream. 2 tablespoons flour. 1 teaspoon Worcestershire sauce. 1/2 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Put breadcrumbs, egg, chopped parsley, salt, and pepper in a bowl. Add the ground beef and mix it all together. Mix well, then roll the meat into balls. Set a pan on medium heat and add the olive oil. Do this to all sides of the meatballs. Take it out of the pan and set it aside. Put the onion and garlic in the same pan. Cook until it gets soft. When you add the mushrooms, cook them until they start to brown and give off their juices. Add the flour to the mushrooms and mix them together. Just a minute or two. Add the beef broth and stir it in until it gets thick. Add salt, pepper, Worcestershire sauce, heavy cream, and dried thyme. Let it mix well. Let the sauce cook down for a few minutes until it gets thicker. Put the meatballs back in the pan and cover with the sauce. Simmer for 10 to 15 minutes, or until the meatballs are fully cooked. Serve hot, and if you want, top with more parsley.

Ingredients: 4 fresh-caught trout fillets. 2 tablespoons olive oil. 1 onion, diced. 2 bell peppers, diced. 3 cloves garlic, minced. 2 cups crushed tomatoes. 4 cups fish or vegetable broth. 1 tablespoon Cajun seasoning. 1 teaspoon paprika. 1 teaspoon dried thyme. 1 bay leaf. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: In a big pot, heat the olive oil over medium-low heat. Cut up some onion, bell pepper, and garlic. For about 5 minutes, or until softened, saut. Add the fish or vegetable broth, paprika, dried thyme, bay leaf, salt, and pepper, along with the crushed tomatoes. Turn the heat down to low and let it cook for 10 minutes so the flavors can blend. Put the trout fillets slowly into the broth that is already simmering. Don't open the lid for 8 to 10 minutes. The fish is done when it flakes easily with a fork. Take out the bay leaf and throw it away. Serve the trout court bouillon hot with fresh parsley that has been chopped on top. Have fun!

Ingredients: 1 tbsp olive oil. 1 yellow onion, chopped. 2 cloves garlic, minced. 1 tbsp grated fresh ginger. 1 tbsp curry powder. 1 tsp ground cumin. 1/2 tsp ground turmeric. 1/4 tsp cayenne pepper. 4 cups chicken broth. 1 14 oz can coconut milk. 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces. 1 cup diced tomatoes. 1 cup chopped carrots. 1 cup chopped cauliflower. Salt and pepper to taste. Fresh cilantro leaves, for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the chopped onion and cook for about 5 minutes, until the onion turns clear. Put in ginger that has been grated, curry powder, cumin, turmeric, and cayenne pepper. Stir the food all the time for another two minutes. Add the coconut milk and chicken broth. Bring to a low boil. Add cauliflower, tomatoes, carrots, and chicken pieces that have been cut up. After 15 to 20 minutes, the chicken should be fully cooked and the vegetables should be soft. Add pepper and salt to taste. Add fresh cilantro leaves on top and serve hot. Have fun!
