Civet d’oie Gascon (Mamy)

500 g chicken and veal bouillon

500 g thin strips pork diced in small cubes

60 g butter

500 g sliced mushrooms

50 g cognac

1 goose

1 Liter red wine

Thyme, oregano, sage, rosemary

200 g onions, quartered

Roast goose until 2/3 cooked (about 20 min per pound for full cooking).  Carve goose.

In the grease from the roasting goose, brown pork cubes and onions.

Boil wine and then  add the equivalent amount of bouillon.  Add the herbs, pork, onions, and pieces of goose.  Cook covered on low heat (about 1 hour).

Mash the goose liver, brown it in butter, add mushrooms and cognac.  Add whatever cooking juices needed to make it a thick sauce.

Serve the pieces of goose with the above sauce poured on.
