Ingredients: 1 bone-in pork roast about 4-5 lbs. 2 tablespoons olive oil. 4 cloves garlic, minced. 1 tablespoon dried rosemary. 1 tablespoon dried thyme. 1 tablespoon paprika. Salt and pepper, to taste. 1 cup chicken broth.
Instructions: Set the oven to 275F 135C before you start. Lay the pork roast out on a cutting board and cut it into several deep slits. To make a tasty rub, put minced garlic, rosemary, thyme, paprika, salt, and pepper in a small bowl and mix them together. For the best flavor, make sure the mixture gets into the pork's slits when you rub it all over. Fill a roasting pan with chicken broth. Place the pork roast inside the pan. This will keep the meat moist while it cooks. Place the pork in an oven that has already been heated. Roast it for four to five hours, or until the internal temperature reaches 190F 88C and the meat is almost falling apart. After cooking, let the pork rest for 15 minutes before cutting it up. Place pork slices on a platter and serve them with your favorite sides.
