Salted Caramel Oreo Cookie Balls
Raw Pumpkin Pie Balls
Ingredients:
1 cup raw pecans
1 cup raw almonds
10 medjool dates
3 Tablespoons raw pepitas (also known as pumpkin seeds)
1/2 cup pumpkin (fresh or canned)
1 1/2 teaspoons cinnamon, ground *
1/2 teaspoon nutmeg, ground *
1/4 teaspoon ginger, ground *
1/4 teaspoon cloves, ground *
Instructions:
In the food processor, pulse almonds, pecans, pepitas and spices together until it forms a fine meal. Add the dates and continue to pulse with the nuts until well mixed. Add in the pumpkin and pulse until a dough starts to form as a ball in the food processor.
Roll the dough into balls between your palms. If you find the dough sticking to your hands, simply wet your hands under running water, shake off the excess water, but do not towel dry. Moist hands will help you get the dough into nicely shaped balls. Makes approximately 12 balls. Cool and store the cookie balls in the refrigerator to firm up before serving. For longer storage, store the cookie balls in your freezer.
Today I added a candy corn (not raw!) in the middle of each cookie ball for a special Halloween Trick or Treat surprise. Happy Autumn!!!!!
