Cooking healthy with no effort
Yesterday, I did not want to cook, but did not want to go out… After a busy day. So I took three chicken tights rubbed them with salt, pepper, oregano, garlic powder and olive oil.
Warmed up my toaster oven (400 degrees Fahrenheit). I washed 3 small yams and pierced them, on all sides, with a fork. Placed all of them (chicken and yams) in a glass baking dish. Put the chicken on top if you can not have an even layer. Cooked them for 1 hour while I did nothing else... but relaxing. The yams are done when you press them down and they are not firm. If your oven temperature runs high this dish will done at 45 minutes… When you make it for the first time check the food at 45 minutes.
I made a salad... I got some arugula from the bag (they were pre-washed), added cherry tomatoes, shredded carrots, sliced almonds, dried cranberries, salt, and fresh pepper. Add the dressing of your choice. Trader Joe’s sells bags of shredded carrots. I used olive oil and vinegar.
No cutting, no shredding... nothing. Enjoy and relax.
Note: Chicken taste better when it is seasoned in advance.
