Normally, I make the lazy woman’s scallion pancake. The sourdough discard is at an extremely fermented state which my taste buds no longer want to partake in. I have a lot of scallions that I don’t want to go south. Hence, I decided I would attempt to make authentic Chinese scallion pancakes sometime in the very near future. I searched pinterest for recipe, I read a few I found and wasn’t moved to make any of them. Yesterday, my husband agreed to eat the leftover spaghetti if I made him chili today. Yes, for Instant Pot Vegan chili. I digress. While my husband ate leftovers, I was not in the mood for my lazy go to meal of pasta and ketchup (fix your faces, it’s good). So, I went on The Google instead and searched for authentic Chinese scallion pancakes. The search led me to a recipe by Elaine’s (@chinasichuanfood). You remember how I rave about @ashrod’s recipes because not only are they very good, they are good for people with Multiple Sclerosis because of her methodology. Well, same goes for Elaine. I read through some of her food blog. It’s good for us #mswarriors who like to cook. Her Chinese Scallion Pancakes (Congyoubing) recipe while it requires some time to rest the dough twice, it is a relatively easy. I didn’t feel overwhelmed by the process. This recipe gives you the option to sprinkle Chinese 5 Spice on the pancake when rolling out the dough and adding the scallion to make the pinwheel. Sprinkle the 5 spice. The pancake is delicious with or without a dipping sauce. I have leftovers going to reheat for breakfast.
