In this recipe, soft chicken is mixed with cold spaghetti noodles that are covered in a tasty peanut sesame sauce. It's great as a cool meal on a hot day or as a lunch you can make ahead of time.
Ingredients: 8 oz cooked chicken breast, shredded. 8 oz spaghetti noodles. 1/4 cup peanut butter. 3 tbsp soy sauce. 2 tbsp sesame oil. 2 tbsp rice vinegar. 1 tbsp honey. 2 cloves garlic, minced. 1 tsp grated ginger. 1/4 cup chopped green onions. 1/4 cup chopped cilantro. 1/4 cup chopped peanuts. 1 tbsp sesame seeds.
Instructions: Cook spaghetti noodles according to package instructions, then rinse under cold water and set aside. In a mixing bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger until smooth. Add cooked chicken, noodles, green onions, and cilantro to the bowl. Toss until everything is evenly coated with the sauce. Chill in the refrigerator for at least 30 minutes before serving. Garnish with chopped peanuts and sesame seeds before serving.
