Pão de Ló - Sponge Cake
Ingredients:
8 eggs (large)
16 soup spoons of sugar (full spoons)
8 soup spoons of flour (4 spoons of self raising flour + 4 spoons of plain flour)*
Limon zest (it’s optional, I don’t use)
*Mcdougalls Self Raising Supreme Sponge Flour + Mcdougalls Plain Flour (I found in Tesco supermarket online their similar to the flour I used)
Preparation:
Heat the oven 180ºC , butter the baking tin and put a light layer of flour all around the tin.
In a large bowl, using an electric whisk max speed beat the eggs, then put the 16 soup spoons of sugar.
Mix for 20 minutes, the mixture will look smooth.
Put the 8 soup spoons of flour (4 spoons of self raising flour + 4 spoons of plain flour) on a bowl with a spoon mix the two qualities of the flour.
Lower the speed of the electric whisk to minimum speed, put the flour one spoon at a time, let the flour disappear, then put another spoon of flour, until all flour is used. Bake 30 minutes, when its over with a skewer see if its baked.
Coquinhos-Little Coconut Cakes
Ingredients:
200g desiccated coconut
200g sugar
4 eggs (large size)
cupcake cases
Preparation:
Heat the oven 200ºC.
In the oven tray line the cupcake cases. (because cupcake cases are bigger then the ones I used I don’t know exactly how many little cakes you’ll have)
In a large bowl, using an electric whisk minimum speed, mix the coconut and the sugar.
Add one egg at a time, wait until the egg disappear , then add the other..
Let the mixture be even than turn off the electric whisk.
Put the mixture of the coconut little cakes in the cupcake cases, just to the middle, don’t fill to the top because it grows a little. Bake 15 minutes.
