Baking Yesteryear Pt 2
Since it's the school holidays my daughter had some free time to do a little baking. She chose the Cornflake Macaroons (I suspect she just turned the page from the Pecan Dainties and didn't bother looking any further)
These are basically a coconut macaroon but with cornflakes added. Possibly just because using cereals was a trend at the time, possibly because the cereal was cheaper so it helped make a bigger batch for less money, idk.
They came out looking flatter than the pics in the book, but I can overlook a pre-teen being a little rough on folding dry ingredients into a meringue mix. They still taste great, and that's the main thing.
Crispy on the outside and soft and chewy on the inside.
The remaining few won't last long.
